Rice Salad with Poached Egg -- It's what's for breakfast


This yummy breakfast bowl was inspired by a photo I saw on Pinterest that came from http://allrecipesmadeeasy.blogspot.ca.  I didn't actually go look for the recipe though.

First, I started some water boiling to poach my egg.  Sometime I'll post a tutorial on how I poach eggs with just water and an egg.  It's so easy and brilliant and turns out lovely poached eggs in a natural shape.

While the water heated up, I made a rice salad with what I had on hand:  leftover brown rice, a yellow heirloom tomato from my landlady, some chickpeas, some red onion, and some leftover homemadesalad dressing.  Tossed together the salad, then put some of it in a bowl with a poached egg on top.  Yummy.  Here's a rough recipe:

Rice Salad with Poached Egg
(makes one serving, but easily adaptable)

1 cup cooked brown rice
1/4 red onion
1 tomato
1/2 cup chick peas
1 tablespoon vinaigrette
1 egg

Start water to poach egg, and add egg when water is ready.  You can prep the salad while the water heats and egg cooks.

Toss all ingredients, except for the egg (which you will poach, of course).  Put about 3/4 of a cup of the salad (or however much you'd like) into a bowl.  Place poached egg on top, with salt & pepper to taste.  Save the rest of the rice salad for lunch another day (I'll probably toss some chicken in with mine for tomorrow's lunch).  Enjoy!
